This strong commitment to quality is evident in each single word of the Specification. The European Union, after careful evaluation, acknowledges with this valued certification all the products that respect specific quality and production chain standards: the origin of raw materials, i.e. meat, the regulations concerning production recipes, the procedures used during food processing and the delicate but fundamental ripening phase: each single process must respect the requirements of the Specification as approved by the European Union.
